(More customer reviews)I buy this flour for our younger son who is on Glutet-free/Casein-free diet but all family enjoy teff pancakes.
Recipe cannot be easier:
- 3 large eggs,
- 2 tbs of fructose or honey (can be substituted with sugar),
- 4 cups of spring water,
- 2 + (1/4) cup of teff flour,
- 1/2 tsp of baking soda + 2 tsp of freshly squeezed lemon juice (you can add this mix at the end as a multi-purpose rising agent for any baking).
Usually I use two 10" frying pans at once to make flat pancakes as fast as possible.

(More customer reviews)I had been trying to make GF cornbread from scratch with limited success. Now I don't have to! Tried this for the first time and it is excellent. Only had to use 1/3 of the bag for 6 muffins so, at $2.50 per bag, it's not at all expensive. Now I can make casaroles with cornbread topping, etc. I also am not fond of the Bob's mixes with the bean flour (taste really funny and beany) but this one is a keeper.

The ingredients listed on the box are "Black Sesame, Almonds, Cashews, Sun Flower Seeds, Pumpkin Seeds, Rice Malt, Sesame Seeds, Natural Flavors, Cane Juice, Sea Salt." That's a pretty significant difference, especially since I'm violently allergic to cashews. I will be returning these.

(More customer reviews)I was completely surprised when one of my customers brought this cake mix to me to use for their wedding cake, I made it and it was wonderful. They paid $5.25 per mix, so once I realized how easy it is to use and how wonderful it is I began my search and was so excited to find it at such a good price. I tried mixing in different ways, according to package directions and also separating the eggs and beating the whites and folding them in as the final step in preparation. It was an effort to see how much height I could get. Beating the whites separately did give a little more height, but all in all I determined it was not worth the extra trouble. It is wonderful as it. I used one mix in a 10 inch square pan, baked three layers and stacked them. It made a very tall, nice, rich brownie-like cake. I don't need gluten-free but am so crazy about this mix I have a case now, for my personal use. I highly recommend it.
